The modern Israeli wine industry was founded in the late 19th century. Today, Israeli winemaking takes place in five regions: Galil (including the Golan Heights), the Judean Hills, Shimshon (Samson), the Negev, and the Sharon plain. During centuries of Islamic rule, ancient Israeli vineyards were uprooted along with any indigenous grape varieties. Today, the wine industry produces primarily French grape varieties imported during the late 19th century. The most widely planted varieties include Cabernet Sauvignon, Chardonnay, Merlot and Sauvignon Blanc. Almost all wines produced in Israel are kosher.
