S’More Cocktail

Spirits are delicious, are great for kicking off a party, and now can satisfy your sweet tooth, too. S’mores are a campfire favorite and kids love them, but with a little imagination they can be turned into a boozy adult favorite. The S’More Cocktail combines fluffy marshmallows and vodka for a tasty summer drink to enjoy in the shade.

To really bring the S’More Cocktail to life, make your own marshmallows. The process is pretty simple, although it does require your attention and patience. With just a few ingredients, you can have a sweet handmade cocktail to impress at your next barbecue.

Marshmallow Ingredients:

2 Tbsp gelatin

1 cup cold water

1 cup corn syrup

1.5 cups granulated sugar

⅓ cup marshmallow or whipped cream flavored vodka

Cocktail Ingredients:

1.5 oz. vodka

1.5 oz. Kahlua

Chocolate chips and graham crackers

Boozy Marshmallow Directions:

1.Line a pan with parchment paper and cover it with cooking spray.

2.Combine half of the cold water with the gelatin and stir just enough to smooth out the lumps. Let the mixture sit until it’s firm - about 10 minutes.

3.While it firms, combine the remaining water with the sugar and corn syrup. Stir until the sugar is wet.

4.Heat the water/sugar mixture on the stove over medium heat and stir constantly until it boils. When it boils, stop stirring and keep the heat high until the mixture reaches a temperature of 242 degrees Fahrenheit.

5.When it hits 242 degrees, immediately remove the mixture and let it cool to 210 degrees.

6.While the mixture cools, heat the gelatin over simmering water. Stir constantly until the gelatin melts into a clear liquid, and add the vodka.

7.Mix the gelatin with the hot sugar mixture in a mixing bowl, and beat on high immediately with an electric beater until the liquid turns white and medium peaks form - about 10 minutes.

8.Transfer the mixture to a pan immediately and cover with parchment paper. Freeze it overnight, or at least eight hours.

9.When the marshmallows are ready, remove them from the freezer and gently remove the marshmallow from the pan.

10.Cover all sides with powdered sugar and cut into cubes - and then sprinkle more powdered sugar.

11.You can serve the marshmallows immediately or store them in the fridge.

S’More Cocktail:

1.Pour Kahlua and vodka into glass and top with marshmallows. (Toast the marshmallows over an open fire, or the stove, to really bring out the s’more flavor).

2.Garnish with chocolate chips and graham crackers.
